The Forum is a great rectangular square (38 metres of width and 142 metres of lenght) originally paved with tufa; after the earthquake of 62 BC the paving was remade of travertine. A portico in double order, the lower one Doric and the upper one Ionic, surrounded the Forum on three sides, except the northern side. The square was a pedestrian precinct with the service streets blocked through special rocks. The Forum was the political, economic, commercial, religious center of the city. PATINA ZOMOTEGANON (Fish Fillets with Leek and Coriander)
(Apic. 4, 2, 27) Ingredients:
1 whole firm-fleshed fish
200 ml fish stock
30 ml white wine reduced
Liquamen to taste (or soya sauce)
2 tsp olive oil
1 sliced leek
1 tsp coriander seeds
large pinch of black peppercorns
1 tsp lovage (or celery seeds)
1 tsp chopped fresh oregano
2 raw egg yolks
twist of black pepper
