The name of the temple derives from its original function in the Samnite period. Following the town’s colonisation, the temple became a Capitolium, a temple dedicated to the capitoline triad of Jupiter, Juno and Minerva, in accordance with the religious tradition of Rome which required the centre of every town to have a temple dedicated to the most important gods on Mount Olympus. (Apic. 3, 7) Ingredients:

• 1/2 honey melon
• 1/2 water melon
• 500 ml Passum
• a little bit of honey (or Passum)
• 1 tblsp minced parsley
• 1/2 tblsp freshly ground pepper
• a little bit of Liquamen, or a dash of salt
• pennyroyal
• vinegar, if wanted

Peel, stone and dice the melons. Then cook it in a pan together with spices and herbs until done.
